White Bean Soup
This is a very easy, fun and cheap recipe. It seems healthy too. You need to have it with a Baguette. I apologize if you are gluten-free, but a fresh baguette really makes this dish.
- 1 can of Cannellini Beans (15 oz)
- 3 Carrots chopped
- 1 Onion chopped
- 3 sticks of celery chopped
- 2 cloves of Garlic
- 5 cups of Vegetable Broth
- 4-5 slices of Ham diced
- 1 Teaspoon Garlic Powder
- 1 teaspoon onion powder
- Salt and Pepper
- Fresh Baguette
Sauté the carrots, onion, and celery with olive oil on low heat in a medium sized pot. Try to cook these down for about 8 minutes. We still want to see some chunks of vegetables so make sure that they don’t all disappear. Add your salt, pepper, garlic powder and onion powder. Add your sliced garlic once the vegetables are almost ready and sauté for one minute.
Add your cannellini beans and vegetable broth. Bring this to a boil.
Grab your blender and transfer about 1/3 - 1/2 of your soup into the blender and blend that up. Return your puréed soup to the pot and make sure to give it a good stir. It is really up to you on how much soup you want to puree. I like my soup less watery so I blend about half of my pot.
Now add your diced ham into the pot and keep the soup on a simmer for about 30 minutes.
Once ready make sure to serve with your sliced baguette!
